Socal changed arrival STAR approaching the fix (approximately 2 NM). First officer goes to change FMS and it goes to 'stby.' by the time new arrival STAR is activated; aircraft is 2.5 NM off course.

Title: A B757 PLT RPTS A LAX LATE RWY CHANGE CAUSED A HDG CHANGE WHEN WAYPOINTS DROP. THE ACFT WAS 2.5 NM OFF OF COURSE WHEN PROGRAMMING WAS COMPLETE.
Narrative: SOCAL CHANGED ARR STAR APCHING THE FIX (APPROX 2 NM). FO GOES TO CHANGE FMS AND IT GOES TO 'STBY.' BY THE TIME NEW ARR STAR IS ACTIVATED; ACFT IS 2.5 NM OFF COURSE.
