Narrative:

80 NM northwest of ZZZ at FL340; I noticed the #1 engine oil quantity was 8 quarts. We had departed from a maintenance station at which both engines were svced to 16 quarts; so I suspected there might be a problem. As I watched; the oil quantity continued to decrease to 6 quarts. I referenced the oil quantity decreasing checklist in the QRH; then called flight dispatch and maintenance control. During our conversation the #1 engine oil quantity decreased to zero. In accordance with the QRH procedure; the decision was made to monitor the #1 engine oil pressure and temperature; which were normal; and to continue towards ZZZ1. Concurrently; the dispatcher and I agreed that ZZZ was a potential divert airfield. Shortly after I ended the radio conversation with dispatch and maintenance; the #1 oil pressure decreased to 35 psi. We declared an emergency; requested diversion to ZZZ; and shut the engine down in accordance with QRH procedures. The descent; approach; and landing were uneventful.

IN ACCORDANCE WITH THE QRH PROC; THE DECISION WAS MADE TO MONITOR THE #1 ENG OIL PRESSURE AND TEMP; WHICH WERE NORMAL; AND TO CONTINUE TOWARDS ZZZ1. CONCURRENTLY; THE DISPATCHER AND I AGREED THAT ZZZ WAS A POTENTIAL DIVERT AIRFIELD. SHORTLY AFTER I ENDED THE RADIO CONVERSATION WITH DISPATCH AND MAINT; THE #1 OIL PRESSURE DECREASED TO 35 PSI.
