Narrative:

This is not a description of an event; rather a situation that I believe could possibly pose a serious health/safety concern for passenger and crew on all flts from gua-ZZZ. The meals for the flight gua-ZZZ are boarded in ZZZ the evening before (along with the meals for the ZZZ-gua leg). The galley is 'round-tripped;' with breakfast (crew meals and first class passenger) for the return flight boarded in carts in the first class galley. The meals are kept cold by a chiller system throughout the night flight from ZZZ-gua. In the morning another crew then takes them out of the cart and cooks them on the flight back to ZZZ. My concern is that the chiller system may not always be functioning properly (they are often inoperative) and might even be inadvertently turned off for an undetermined period of time during the flight to gua; or on the ground before the new crew boards. The meals (usually omelets or other egg dish and fresh fruit) could become spoiled. The new crew may not be aware of any problem; cook and serve the meals to passenger and crew. Crew members (particularly the pilots) could become ill en route due to contaminated food. This would become a serious safety issue if both pilots were affected. A solution could be to have food boarded locally in gua; with assurances that the food is fresh.
