Narrative:

We were given an arrival route re-route from the bearr arrival to slc to the brigham city arrival. ATC gave us an initial heading for the brigham city VOR. We asked for a lower altitude due to winds aloft. (This was during climb.) ATC reassigned FL210 from FL250. We were at approximately 17000 ft. We made our turn to lho and I forgot to dial in our new assigned altitude and we went through it and ATC had us come back down to FL210. TCASII showed no aircraft within 40 DME of aircraft +/- 6000 ft. I was en route from idaho falls to salt lake city.
