Narrative:

We received our 4th version of our final weight manifest message after takeoff. We originally taxied out; but called back to the gate due to an out of limits cg. Ramp opened the cargo doors and changed the cg. During this time we received 2 more final weight messages; both received after the ramp was done loading; and we assumed these were our final weights. We finally received the last 'final' weights message in the climb eight minutes after takeoff. Our weight dropped 507 pounds and the cg stayed the same.
