Narrative:
During the after-start checklist; I failed to get the engine driven generators on-line. We completed the after start checklist and I responded properly when challenged; but I did not put the generators on-line. Since the APU generator had the busses; everything appeared normal. After takeoff; the flight attendants notified me that the galleys had no power. While communicating with maintenance via ACARS; the first officer discovered the generators were not 'on-line.' I established the generators and we continued. Although I did not feel rushed; I just missed the item on the checklist. The first officer and I discussed the importance of checklist verification. I truly believed the generators were on-line; and it was that human factors 'strength of an idea' that caused me to 'not see' the generator panel condition. Missed item on after-start checklist.
