Narrative:

FL270; we received clearance from ZDV to cross quail intersection at 17000 ft and 250 KTS. We had changed the landing runway in the mcdu 3 times due to ATIS/runway changes into denver. We failed to reenter the restr at quail. We noticed too late that we would not make our assigned altitude and airspeed at quail and notified ATC immediately. We are given a heading and further clearance to intercept runway 35L localizer; landing uneventful. Runway changes were contributing distracters and reprogramming the FMGC after each change would have prevented this occurrence.
