Narrative:

At FL250 and approximately 70 mi east of ZZZ we observed the following engine indications: low oil pressure light on. Engine oil pressure gauge -- approximately 7 psi oil quantity page -- 0 quantity. Oil temperature gauge approximately 140. We accomplished the engine low oil pressure checklist and the in-flight engine shutdown irregular procedure. Captain contacted dispatch; maintenance; and declared an emergency with ATC. The flight attendants were instructed to prepare for an evacuate/evacuation. We returned to ZZZ for a safe landing where we had the emergency equipment standing by.
