Narrative:

B747 opposite direction traffic called at FL380 on A761. Traffic acquired visually and determined to be sufficiently offset (500 yds) so as not to be a problem. Wind was parallel to the airway at altitude. Aircraft went from smooth to instantaneous moderate turbulence. We took a quick 30 degree cut off the airway and the turbulence stopped within 10 seconds. No injured passenger or any other problems. Surprised that offset wasn't enough and will look for a larger lateral separation next time. Probably need to reemphasize the hidden dangers in the new 1000 ft separation environment.
