Narrative:
Numerous WX deviations and WX closed a portion of an FMS arrival. I cleared aircraft X to rejoin the arrival and assigned FL250 instead of the normal descent profile. The pilot read back FL250. A few moments later, I observed aircraft X descending below FL250 and converging with aircraft Y at FL240. I issued aircraft X FL210 and called traffic and climbed aircraft Y to FL270.

Title: B737 CREW ASSIGNED DSCNT TO FL250 CONTINUED THROUGH THE ALT AND CONFLICTED WITH AN AIRBUS AT FL240.
Narrative: NUMEROUS WX DEVS AND WX CLOSED A PORTION OF AN FMS ARR. I CLRED ACFT X TO REJOIN THE ARR AND ASSIGNED FL250 INSTEAD OF THE NORMAL DSCNT PROFILE. THE PLT READ BACK FL250. A FEW MOMENTS LATER, I OBSERVED ACFT X DSNDING BELOW FL250 AND CONVERGING WITH ACFT Y AT FL240. I ISSUED ACFT X FL210 AND CALLED TFC AND CLBED ACFT Y TO FL270.
