Narrative:

Our flight was at the arlin intersection on the arlin 2 arrival to phx. The controller issued a vector of heading 050 degrees, intercept the phx 057 degree radial, descend and maintain 8000 ft. I read back 'air carrier XXX, 050 degrees, track inbound on the phx 057 degree radial 7000 ft,' at which time 7000 ft was set in the altitude alert window on the MCP. No correction was made by phx approach control as to my incorrect altitude readback. While passing approximately 7500 ft, phx approach control issued a climb clearance back to 8000 ft and to watch for traffic at 7000 ft nwbound. Air carrier XXX assumed an immediate climb leveling off at 8000 ft. Aircraft separation was not compromised. There was a lot of radio chatter. I feel the combination of heading, radial interception and altitude change information given all at once, combined with the busy phx TCA and radio chatter contributed to the 'mis-speak' and 'mis-dial' of altitude of 7000 ft, and may have led to a possible violation of aircraft altitude. Also, the last day of 4 and an 11-12 hour day (awake) may have contributed to the deviation (fatigue). Supplemental information from acn 494710: I called approach control after landing and they stated they had listened to the tape and we had been cleared only to 8000 ft and that we had read back 8000 ft.
