Narrative:

This was the return trip. While en route from mmh to fat in VFR conditions at 16500 ft MSL, the plane encountered a huge updraft while crossing the mountains. The updraft was more than 6000 FPM and the airplane climbed no matter what we did short of a dive which would not have been a good idea considering the mountains. We attempted to stay below FL180 but could not until we turned around back towards bishop. Before succeeding a descent and turnaround, the plane reached approximately FL210. Once back down we requested and got an IFR clearance to fat and proceeded south before going west to avoid such turbulence and severe updrafts. Next time the winds are strong, a route around the mountains would be better!
